Mini Meatloaves - Gluten Free

This simple gluten free meatloaf recipe uses every day ingredients and cooks in about half the time. The kids love them because everyone gets their own.

Ingredients
- (1.5 lbs) 1 lb | Ground Beef
- 2 eggs
- 1 onion, diced
- 1 Tbsp Worcestershire
- Salt and pepper to taste
- ⅓ c ketchup
- 2 Tbsp brown sugar
- 2 Tbsp mustard
Directions
- Preheat the oven to 350°F
- Lightly grease a 9x13 inch cake pan
- Combine ground beef, onion, eggs, Worcestershire and season with salt and pepper
- Divide the mix into six and form mini loaves in the pan
- Mix ketchup, brown sugar, and mustard together until well combined; spread or drizzle over mini meatloaves
- Bake until no longer pink in the center, about 20-30 minutes, or until 160° on your meat thermometer
Variations
- Plain ketchup or BBQ sauce also work great for topping
- Shredded cheese melted on top makes like a mini cheeseburger loaf
- Cooked bacon strips on top or bacon bits mixed in is always a hit
Since Longhorn is leaner than grocery store ground beef, your mini meatloaf won't be floating in grease so it doesn't need breadcrumbs like traditional meatloaf. This does make a more dense meatloaf but that isn’t a problem for us as the leftovers are great for thick and hearty meatloaf sandwiches.
