My Best Roast Beef

This recipe is simple with common ingredients and makes the best roast beef and au jus. It is perfect for slicing for a delicious French Dip sandwich or simple yet elegant roast beef dinner.

Ingredients

  • 2.1-2.5 lbs | Eye of Round Roast
  • 1 Tbsp minced garlic
  • 2 tsp Italian seasoning
  • 1 tsp whole peppercorns
  • 3 bay leaves
  • 3 c beef broth
  • 1 c water
  • 1/2 c soy sauce
  • 1/4 c Worcestershire
  • 1 onion, quartered

Directions

  • Pull meat out about 30 mins before cooking for best results
  • Brown roast on all sides (ideal but optional)
  • Place rump roast in a slow cooker
  • Add all ingredients to slow cooker
  • Cook on LOW for 6-10 hours or until desired tenderness

This last bit is totally optional but worth the extra time. About two hours before serving, I like to take the roast out, slice it thinly and then place back into the pot and allow it to cook on low for another 1-2 hours. This really lets the flavor soak into the meat and makes it extra juicy and tender.

Rump and Eye of Round roasts are leaner than chuck roast making it perfect for slicing, however this recipe is great with chuck roast as well. The au jus is delicious and makes for a wonderful base for soup or stew.
