Stuffed Peppers

I love stuffed bell peppers - so quick and versatile! The key to ‘quick’ is partially cooking the bell peppers before stuffing to reduce baking time. See below for some variations on switching up the recipe.

Ingredients

  • 1 lb | Ground Beef
  • 1 onion diced
  • 1 Tbsp Worcestershire
  • 1 tsp minced garlic
  • 2 tsp Italian seasoning
  • 4 medium bell peppers
  • 1 cup cooked rice
  • 1 can (14 oz) diced tomatoes
  • salt & pepper to taste

Directions

Directions

  • Brown ground beef with onion
  • Stir in Worcestershire, tomatoes, and seasonings
  • Mix in rice and set aside
  • Cut tops off bell peppers
  • Stuff peppers with ground beef mixture
  • Bake in oven at 350° F approximately 45 minutes or until peppers are to desired doneness

Variations

  • Add mushrooms or chopped bell pepper to ground beef when browning
  • Add mozzarella or parmigiana cheese to the top in the last 10 mins
  • Cover with marinara before baking
  • Switch out Italian seasoning for Montreal Steak for cheeseburger stuffed peppers, or Taco seasoning for Mexican stuffed peppers

This is a favorite in my house. The kids love when I double the meat and seasonings so there’s always extra to pile on the peppers. I like to stuff the peppers then place the extra in the dish around the peppers so it all bakes together. Leftovers make great spaghetti sauce, too.
