Stuffed Peppers

I love stuffed bell peppers - so quick and versatile! The key to ‘quick’ is partially cooking the bell peppers before stuffing to reduce baking time. See below for some variations on switching up the recipe.

Ingredients
- 1 lb | Ground Beef
- 1 onion diced
- 1 Tbsp Worcestershire
- 1 tsp minced garlic
- 2 tsp Italian seasoning
- 4 medium bell peppers
- 1 cup cooked rice
- 1 can (14 oz) diced tomatoes
- salt & pepper to taste

- Brown ground beef with onion
- Stir in Worcestershire, tomatoes, and seasonings
- Mix in rice and set aside
- Cut tops off bell peppers
- Stuff peppers with ground beef mixture
- Bake in oven at 350° F approximately 45 minutes or until peppers are to desired doneness
Variations
- Add mushrooms or chopped bell pepper to ground beef when browning
- Add mozzarella or parmigiana cheese to the top in the last 10 mins
- Cover with marinara before baking
- Switch out Italian seasoning for Montreal Steak for cheeseburger stuffed peppers, or Taco seasoning for Mexican stuffed peppers
This is a favorite in my house. The kids love when I double the meat and seasonings so there’s always extra to pile on the peppers. I like to stuff the peppers then place the extra in the dish around the peppers so it all bakes together. Leftovers make great spaghetti sauce, too.
